Chinese Mongolian Hot Pot

The one thing about this particular Chinese hot pot is that it can become an interactive meal, making it perfect for the picky eaters in your home.

Makes: 4 servings

Total Prep Time: 15 minutes

Ingredients:

• 1 pound of lamb, thinly sliced

• 4 ounces of cellophane noodles, soaked for 20 minutes

• 1 pound of bok choy, cut into small pieces

• 1 block of tofu

• 8 cups of chicken broth

Ingredients for the dipping sauce:

• 6 Tbsp. of roasted sesame paste

• 6 Tbsp. of water, warm

• ½ tsp. of salt

• ¼ cup of soy sauce

• 2 Tbsp. of sherry

• 2 Tbsp. of apple cider vinegar

• 1 Tbsp. of white sugar

• 1 tsp. of chili oil, hot

Directions:

1. Prepare the dipping sauce. In a bowl, add in the salt, roasted sesame paste, soy sauce, sherry, vinegar, white sugar and chili oil. Whisk well until evenly blended.

2. In a hot pot, add in the hot broth. Allow to come to a boil.

3 Add in the cellophane noodles and sliced lamb. Cook for 5 minutes or until the lamb is cooked through.

4. Add in the bok choy and cook for 3 minutes or until wilted.

5. Serve immediately.
